In this pairing and tasting, indulge in some of the finest flavors from the diverse world of Spanish cheeses and wines—and discover your own favorites. • We’ll start with traditional Spanish cheeses. From the sophisticated manchego of Castilla-La Mancha to the pungent cabrales from Asturias, every cheese and its flavor tells you something about its region. • I’ll introduce you to Spanish wines from some of the world’s most famous wine regions. Whether you’re into bold reds with deep fruit flavours or a crisp, refreshing white, Spain has a wine to match your taste. • For the highlight, we’ll pair the two: the key is to match the weight of the wine with the texture of the cheese, and to experiment with combinations that you love. Everyone’s palate is different, so trust your own instincts. By the end of our time together, you’ll have a newfound appreciation for the cheeses and wines of Spain and how they bring out the best in one another.

Brew and taste Colombian coffee with a Madrid twist

Great coffee starts with great beans, of course, and Colombia grows some of the best. In this hands-on workshop, we'll experiment with the best way to brew Colombian coffees to bring out their unique aromas and flavors. • I'll begin by talking about my project to source coffees from my family's estates in Colombia, have them roasted here in Madrid, and then sell them directly to Spanish customers. • Then, we'll make coffee using three different methods: the Moka pot, French press, and dripper. We'll talk about how factors like the fineness of the grind and steeping time affect the final cup. • We'll taste three different Colombian coffees using these methods, so you'll discover which brewing method works best with different beans and learn how to make it at home. You'll get to experience Madrid´s specialty coffee scene by tasting exceptional coffees, asking me all your questions about how coffee is grown and sourced, and learning new brewing skills to practice at home.

Learn about how these wines are produced, the geography of different growing regions, and the characteristics of each winery while relaxing in this cozy, intimate wine bar. • We’ll start with a glass of cava, a fine Spanish sparkling wine, and discuss its production process, the winery's location, and its philosophy. • Enjoy a glass of white wine from Galicia, a Spanish region renowned for its white wines. You’ll learn about the region's unique viticulture system while snacking on a smoked sardine tapa, which complements the wine's salinity. • You’ll taste a full-bodied red wine from Ribera del Duero, Spain's most prestigious red wine region. I’ll elaborate on the winemaking process, the winery’s history, and its traditional techniques while serving a cecina tapa—a cured beef similar to ham—to pair with this rich flavor. You’ll walk away with distinct memories and new insights into the wines you sampled, as well as a deeper understanding of your own preferences to inform your future wine choices.
